Whole Radish Pasta

Don’t throw out those radish greens. They have a zingy, peppery bite and are highly nutritious. This simple recipe is infinitely adaptable, depending on which veggies you have around. You might like diced bell pepper, carrots or leeks, for example. Of course, you can always add a protein source, such as grilled shrimp or chicken, too. Serves 4 to 6

Ingredients:

1 tbsp olive oil
2 tbsp butter
1 medium onion, diced
2 cloves garlic, diced
1 bunch radishes with fresh-looking greens still attached
1 cup fresh or frozen peas
1 pound fettucine, linguine or other pasta
Kosher salt and freshly ground pepper, to taste

Garnish (optional):

Handful whole radishes, with their greens, split in half lengthwise
Cooking oil
Spicy red pepper flakes
Freshly grated Parmesan or Grana Padano cheese
