Applesauce can replace liquid fats (but not softened butter) in almost any baked good, such as this wedge of apple cornmeal cake.

Cornmeal cake is an old, downhome favorite. This version uses applesauce to provide a fruity flavor accent and add moisture without adding fat. 

Ingredients:

1/2 cup cornmeal
2/3 cup unbleached all-purpose flour
1/2 tsp salt
