Try this Carrot Raisin Salad Recipe to add flavor and nutrition to your next meal.
2 cups grated carrot
1/2 cup raisins or currants
1/4 cup honey
1/4 cup oil
3/8 cup lemon juice (or slightly more or less, to your taste)
Mix the carrot and raisins together, then combine the liquid ingredients and toss them with the carrot/raisin mixture. As a variation, use 1/4 cup lemon juice and 1/8 cup orange juice rather than all lemon juice, or add 2 cups of grated apple to the salad. Serves 3.
