Try this Beet Slaw Recipe to add flavor and nutrition to your next meal.

Beet Slaw Recipe

1 cup raw grated beet, unpeeled but scrubbed well
2 cups grated carrot or shredded cabbage (or one cup of each)
salt to taste
Lemon-Honey Dressing

Mix the vegetable ingredients together and toss them with the salt, then serve with the dressing. As a variation, add 1/2 cup currants and 1/2 cup chopped walnuts. Serves 6.
