Swiss Chard Souffle Recipe
Ingredients:
3 tbsp of butter or margarine
3 tbsp of whole wheat flour
1 cup of scalded milk
2 tbsp of finely chopped onion
1/2 cup of cooked, drained, and finely chopped chard
1 tsp of salt
4 egg yolks, beaten
4 egg whites
Instructions:
Melt the butter or margarine in a saucepan and blend in the flour, stirring constantly over a medium flame. Gradually stir in the milk and blend until smooth. Then lower the heat and add the cheese, onion, chard, and salt, and continue to stir until the cheese has melted. Remove the mixture from the heat and pour it over the beaten egg yolks in a bowl. Blend well and allow the mixture to stand.
In another bowl, beat the egg whites until they’re stiff but not dry. Gently fold the egg whites into the cheese-chard-onion mixture, then pour the combination into a greased souffle dish or a straight-sided casserole. Bake — uncovered — in a 375 degree oven until the souffle has puffed up and browned (about 35 minutes). Serve at once (before it falls). Serves 4.
