Sprouted Chickpea Salad Recipe
2 cups chickpeas, sprouted
2 garlic cloves, finely chopped
1/2 cup chopped chives or scallions
1 tomato, diced
1/4 cup fresh parsley, chopped
2 tablespoons wine vinegar or lemon juice
1/2 cup olive oil sea salt and freshly ground black pepper to taste
Combine all ingredients and toss to mix. Can be served on a bed of salad greens. Serves 4 to 6.
