
Ingredients
- Vegetable oil for greasing
- 2-1/4 cups (250 g) oat flour
- 1-1/4 tablespoons oil or fat, such as chicken fat or beef drippings
- 1/4 cup (50 ml) boiling water (optional)
Directions
- Preheat the oven to 350 degrees Fahrenheit. Lightly grease a cookie sheet.
- Place the oat flour in a bowl and make a well in the center to pour the liquid into.
- Put the oil into the well, or if you are using a hard fat, such as chicken, spoon it into the bowl and pour the boiling water over the fat to melt it. Stir with a knife or spoon and it will quickly form a dough.
- Lightly dust a clean work surface with some of the remaining oat flour and turn the dough out onto it. You can either roll out the dough to around 1/2-inch thickness or just flatten it into shape with your hands.
- Cut the dough into small pieces or use a small cookie cutter to cut it into discs. Place the discs on the cookie sheet and bake for about 20 minutes.
- 6. These cookies will keep for up to 2 weeks in an airtight container.

- Variations:
- Mix one of the following into the oat flour before adding the oil or fat:
- • 1-1/4 tablespoons chopped fresh parsley
- • 1-1/4 tablespoons grated Cheddar or other hard cheese
- • 1 rounded teaspoon blackstrap molasses
- • 1 rounded teaspoon finely chopped dried apples
