Greek Baked Fish Recipe

Fish plays an important role in Greek cooking — no surprise from a country with more than 10,000 miles of coastline. Try these baked fish filets for a mouth-watering main course.
2 pounds skinless fish fillets (Pacific cod or halibut, or Atlantic salmon)
Juice of 2 lemons
1 tablespoon dry white wine or wine vinegar
2 tablespoons minced fresh oregano
or 2 teaspoons dried oregano
1/4 teaspoon freshly ground
black pepper
Lemon slices for garnish
1. Preheat oven to 350 degrees. Place the fish fillets in a 9-by-13-inch baking pan. In a small bowl, combine the lemon juice, wine or vinegar, garlic, oregano and black
pepper, and beat lightly with a fork. Pour this mixture over the fish.
2. Cover the baking pan with aluminum foil. Bake for 30 minutes or until the fillet easily flakes with a fork. Transfer the fish fillets to a platter, and garnish with lemon wedges. Serves 4 to 6.
