Egg Salad Sandwich Recipe

You don’t have to be a vegetarian to love this Egg Salad Sandwich Recipe!

Ingredients

  • 2 pita breads
  • 4 hard-boiled eggs
  • 1 stalk celery, finley minced
  • 1/4 of an onion, finely minced
  • 1 tsp sweet basil or oregano
  • 1/4 cup mayonnaise
  • Your choice of toppings (lettuce, tomato, etc.)
  • Salt and pepper to taste

Directions

  • Bring a pot of water up to a boil and add eggs. Continue to boil for 10 minutes. Remove pot from heat and run the eggs under cold water until cool to the touch. Peel.
  • Cut each pita in half with scissors.
  • Mash the peeled eggs in a bowl. Add the finely chopped celery, minced onion and sweet basil or oregano. Fold in the mayonnaise, salt and pepper.
  • Spread both inner sides of the pita with the egg mixture.
  • Add toppings of choice.
PRINT RECIPE

Decorate the finished sandwiches as desired, with sliced tomato or with any of the garnishes mentioned in the Tomato, Cheese and Onion Sandwich recipe.
