While dandelions are in season (and when are they not?), this tasty dandelion greens recipe makes an excellent garnish on baked potatoes.
As long as they're proliferating across your lawn, gather up a mess of dandelion greens for our dandelion greens recipe.

A field of golden dandelions is a spectacularly beautiful sight. Dandelions also are a treat for the body and mind. The greens are loaded with healthy vitamins and minerals. Here is a dandelion greens recipe that my family enjoys with baked potatoes.
1 large onion, chopped
1 pound bacon or sausage, cut into small pieces
2 tbsp olive oil
Bunch of dandelion greens, cleaned and cut into 1-to-2-inch lengths
2 tbsp unsulphured blackstrap molasses
Salt and pepper to taste
In a cast-iron skillet, brown onions and meat in the olive oil on medium heat. Add greens, molasses, salt and pepper, then stir and cover. Reduce heat and stir occasionally, cooking until the meat is done. Serve over a baked potato.
