Clabber Coffee Cake Recipe
1 1/4 cups of sifted whole grain flour
1 cup of brown sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of goat milk curd
2 eggs
1 cup of goat milk curd

Sift the flour, sugar, baking powder, baking soda, and salt together in a mixing bowl. Beat the curd and eggs until they’re blended well, then add the mixture to the dry ingredients. Next, stir the batter vigorously until it’s smooth, and turn it out into a lightly greased 8-by-8-inch baking pan. Sprinkle the following over the top and bake the cake in a moderate oven (350 degrees) 20 to 25 minutes.
