What Are Your Favorite (Unusual) Spring Greens — And What Do You Do With Them?

Readers share information and recipes about their favorite eating and cooking greens.

Enter our Green Tomatoes Recipe contest and win some great prizes! Send your favorite recipe for green tomatoes — or invent something totally new and delicious — to us by Nov. 1, 2013. You must include a photo. The recipe doesn’t have to be original, but be sure to include the recipe’s source if it’s not your own. If you’re looking for some information, check out some of the green tomato recipes we’ve already published

The MOTHER EARTH NEWS team will choose two recipes from each of four categories (based on originality, flavor and ease of preparation): Canned and frozen (be sure to include canning instructions if needed); desserts; side dishes; and miscellaneous. Then we’ll prepare the top eight recipes for the MOTHER team to taste, and determine the winner.

The winner will receive a Roma tomato strainer for making tomato sauce and paste, applesauce, jams, baby food and more, as well as a Dustin Mizer duster to help control tomato pests, from Tomato Growers Supply Company. We’ll post all entries on our website in what could become the world’s largest collection of green tomato recipes.

Here’s the fine print: All recipes must be submitted digitally, and no entries will be accepted via regular mail. Email entries to our Green Tomato Recipe contest editor with the recipe either pasted inside the message or attached in a MS Word format document by Nov. 1, and attach a photo in jpg format. Don’t forget to include your contact information, including a phone number and best time to call. Entries that fail to meet these conditions will be automatically disqualified.

Fried Green Tomatoes: I cut mine in french fry strips, rinse to make sure they are wet(this makes the season and batter stick to the green tomatoes) season to your liking and use 1/2 flour and 1/2 cornmeal for batter, add green tomatoes to flour/cornmeal mix and cover all really well. Drop in hot oil in a (deep fryer is best). Fry until golden brown..cut as french fries makes them crispy & crunchy, not soggy... i also do my eggplants and squash this way also :-)
