Occupation: Lindsay is a stay-at-home mom and beekeeper who enjoys baking with traditional methods, gardening, fermenting foods and home brewing.
Place of Residence: Piedmont region of North Carolina
Background and Personal History: Lindsay was born and grew up just outside of Dallas, Texas, moved to New York for four years where she worked in restaurants and taught horseback riding. She worked at an eco-tourism resort in St. John USVI during the summer of 2002 and managed to dodge three months of the cold New York winter in Argentina and Uruguay in 2005.
While she lacks a formal education, Lindsay has learned much from the places she’s traveled to and the wonderful people she’s had the good fortune of spending time with. She doesn’t travel as much now that she’s a mom to two amazing boys (5 and 2 years old) but Lindsay finds that they are her biggest inspiration for continuing to learn and explore in her daily life. With her sons’ arrivals came a new perspective on the importance of trying to live naturally and sustainably.
Current Projects: Baking with Einkorn a very low-gluten, high-protein strain of ancient (thought to be the first cultivated by man) wheat using traditional sprouting and sourdough methods; Keeping bees in three different hive designs; The family garden (a constant work in progress); Preserving foods using traditional fermenting methods instead of canning or pickling with vinegar; Brewing beer, kombucha and soon ginger ale, experimenting with different methods and ingredients; Lindsay is also hoping to start keeping chickens in the near future but is still in the research phase of this.
