American Livestock Breeds Conservancy offers this helpful tip: Boil the egg, drain the water from the pan, put the lid back on and give the pan a few shakes as if you were making popcorn (forward and back, as well as a little up and down). Next, add cold water to cover the eggs, let sit for one or two minutes, drain and peel. At this point, they should peel easily. Also, eggs that are seven to 10 days old will peel easier after boiling than very fresh eggs.

I got this tip from my teacher who grew up on a farm in Penn. Poke a hole in the end of the egg, I used my earring just 'popped' it in, then boiled the day old eggs... ( I did add som vinager to the water too) and then let them cool in the water, and VOILA! it worked! YEAY!!

I punch a hole w/ a pushpin or knife into the large end of my
boiled eggs before boiling, it keeps them from becoming egg drop
    soup, fresh eggs or not.
