    Join Patricia Foreman for some delicious hands-on fun! Salad dressings make salads delicious and healthy. Once you make the basic mayonnaise, you are set to make any dressing of your choice: ranch, blue cheese, Caesar and more! Understand which oils, emulsifiers, herbs and spices are superior for human nutrition and taste. When you understand the basic food chemistry of emulsions and you are also enabled to make sauces, gravies, smoothies and other gourmet delights. By the end of this hands-on workshop you will have made mayonnaise to take home with you.

    Join author, butcher, and cook Meredith Leigh for an immersion into the world of flavor. In this hands-on session, participants will learn how to curate the perfect ratio for seasoning homemade sausage and dry rub, and then pick from a host of spices and herbs to create their own sausage seasoning blend. Then, one spice blend will be chosen for a live sausage demo and tasting during the class. Attendees will leave with ideas for new flavor combinations to try, knowledge about buying and storing bulk spice and herb, fail-proof ratios for curating their own seasoning blends and rubs, cooking tips, and pro techniques for marinating and sausage making.

    Avoid traffic congestion near the fairgrounds by reserving a parking permit for the North Carolina Mother Earth News Fair on April 28-29, 2018! A limited quantity of parking permits are available for the lot at Gate #1 off of Fanning Bridge Road on the north side at WNC Ag Center.

    These hang-tag permits will be mailed in advance of the Fair. It is required that the permit be hanging in clear view from your rearview mirror when entering Gate #1. All other traffic will be turned away.

    Important directions to avoid traffic congestion by the airport: Westbound and Eastbound traffic on I-26: Take Exit 44 in Fletcher and turn north onto U.S. Route 25 (Hendersonville Road). In approximately 2.5 miles turn left onto Fanning Bridge Road. Drive east for 2 miles to Gate #1 of the WNC Ag Center.

    MOTHER EARTH NEWS in collaboration with The Livestock Conservancy and author/speaker Patricia Foreman present this 2 hour intensive breakout session geared toward new or soon-to-be chicken breeders. This workshop is scheduled for Sunday afternoon, Feb. 18, from 2:30-4:30 at the Bell County Expo.

    In this interactive session, you will learn the common sense basics of setting up for a breeder flock and how to make good breeding decisions for creating birds that meet breed standard while producing better meat and eggs in the process. Over time, you can make great improvements to your flock, which will translate to healthier, more productive, and ultimately more valuable birds.

    This session will include hands-on instruction for handling live chickens for the purpose of breeding birds and their evaluation as well as hands on egg selection from a variety of quality and ages.

    This session is designed to be very personal and interactive, so space is strictly limited. Reservations are available first-come, first-served. Do not miss this one-of-a-kind experience!
