Practice simple, time-honored methods for preparing naturally cultured fermented milk foods (such as butter, yogurt, Gouda, and mozzarella) using only basic kitchen tools, raw milk, salt, and rennet. Gain confidence to select, graze, manage, and milk your own homestead dairy cow for the safest, most delicious milk, and learn how to use milk byproducts to make ricotta, cultured buttermilk, and soft-curd cheeses, or as nutritional supplements to end your dependence on purchased feed for your nondairy livestock. The family cow is the heart of the homestead; take home the confidence to start your own home creamery!

Or perhaps you have been thinking it might be a good idea to get training on at least some basic survival skills? Whatever the case, you do not want to miss this unique, informative, and fully immersive half-day survival workshop featuring popular MOTHER EARTH NEWS FAIR speakers Dennis Biswell and Matt Stephens.

    Participation in this exclusive Seven Springs extended workshop is strictly limited to ensure maximum small group interaction. Biswell and Stephens have a combined 50 years in wilderness survival and training, and they will demonstrate some fundamental skills and supplies required for basic wilderness survival with an emphasis on four main goals:

    • building a fire
    • building a dry shelter 
    • finding food (fishing without poles) 
    • water purification

    Participants will get instruction and advice before challenging themselves to use what they have just learned. Transportation will be provided from the main lodge at the resort to a secluded location on the mountain. Attendees will receive the supplies to get their survival pack started!

    Interested in raising your own poultry flock for meat, eggs, or both? Have you recently started a flock but feel you still have a lot to learn about bird health and nutrition? Perhaps you keep laying chickens now but want to get into meat birds? Are you interested in learning how to raise poultry to market for supplemental income? If the answer is yes to any of these questions, you won’t want to miss The Power of Poultry presented by MannaPro.

    In this interactive session, you will learn the common sense basics of setting up for a breeder flock and how to make good breeding decisions for creating birds that meet breed standard while producing better meat and eggs in the process. Over time, you can make great improvements to your flock, which will translate to healthier, more productive, and ultimately more valuable birds.

    This session will include hands-on instruction for handling live chickens for the purpose of breeding birds and their evaluation as well as hands on egg selection from a variety of quality and ages.

    Whether you’re a shepherd or a fiber worker, wool—in all its diverse forms—can enrich your life. This full-day session focuses on connecting, and creating better communication between, the people who produce wool and those who use it, in all its multiple varieties.

    9:00 a.m. Selecting Fleeces: Spinner, non-spinning fiber artisan, or shepherd, you’ll improve your encounters with wool by understanding how fleeces grow and how to select a good one.

    10:15 a.m. Evaluating Fleeces: Let’s get real! For this hands-on session, you—whether you’re growers or buyers—can bring us fleeces for evaluation. Are you a shepherd who wants to put a better product out there? Are you a fiber person who’s bought (or been given) a fleece that you can’t figure out how to use? Bring it on.

    1:00 p.m. Upping Your Income: Value-Added Wool Products: Whether you are a shepherd or a fiber artist, you can increase the value of wool with each step of processing.     2:15 p.m. Connecting Fiber: Where Suppliers Can Sell Products and Artisans Can Find Them: Most people immediately think of Etsy when it comes to handmade or homegrown products, but there are so many marketplaces available, from individual websites or farm stores to farmers markets and retail stores. Whether you’re selling or buying, we’ll help you find channels to locate what you need.

    3:30 p.m. Warm Conversations: Using Social Media in the Fiber World: No, you can't just ask your neighbor's teenager to handle your Facebook page. Learn the pros and cons of the various social media outlets, as well as how to use them to increase sales, find supplies, or even just engage in informative dialogue.

    Learn the basics of freehand knife sharpening. Avoid the pitfalls of unnecessary equipment and cut through the myths surrounding establishing and maintaining an edge.     This one-and-a-half day event is jam packed with fun and informative hands-on sessions for a journey across the fermentation spectrum.

    From bread to beverages and everything in between, learn how fermenting can add that perfect sour or sweet to your creations. Expand your knowledge with workshops covering the dos and don’ts of fermenting, health benefits, and the science behind your favorite foods. Enjoy a wild and rowdy kimchi extravaganza and mouthwatering fermented food tastings. PLUS, get hands-on with these five interactive break-outs:
