Ingredients

  • Fresh turnips are as delicious as they are nutritious. This Turnip Apple Slaw Recipe makes a great choice as a side dish for your next meal.

    Turnip Apple Slaw Recipe

    2 tbsp plain yogurt or kefir
    2 tbsp soy or regular mayonnaise
    1/4 tsp freshly grated black pepper
    1 tsp honey
    1 apple, quartered, cored and thinly sliced (use your grater’s flat blade)
    2 turnips (3 inches in diameter), peeled and coarsely grated
    1 scallion, finely chopped

Directions

  • Combine the yogurt, mayo, pepper and honey in a large bowl.
  • Mix in the apple, turnips and scallion.
  • Chill before serving as a side dish or slathering onto burgers or sandwiches. Serves 4.
