Country Lore: Potato Pizza

It's not a topping. In this reader's version, potato slices form the "crust" of potato pizza.

Add sauce and cheese and you've got yourself potato pizza. Only slice the potatoes lengthwise instead of cross-wise.

Our family enjoys potato pizza, a healthy snack that’s fun to make. First, slice a large potato lengthwise into slices about one-third-inch thick. Boil the slices until they are just fork-soft. Drain and place the slices on a cookie sheet.

Spoon on pizza sauce, then add shredded cheese and any meat or veggie toppings you like. Bake at 350 degrees Fahrenheit until the cheese starts to bubble. Enjoy!

It sounds like a great recipe. I'm also going to try it using sweet potatoes (yams) and leave out the tomato sauce (i.e. make it al fresco). How's this for a (dessert) recipe: Sweet potato Miniature marshmallows Sprinkle of brown sugar Drizzle of honey or maple syrup (depending on preference)
