Makes 4 single or 2 9-inch double crusts


3 cups all-purpose unbleached flour 
1 teaspoon salt 
1 1/4 cups lard, cold and coarsely chopped 
1 egg 
5 1/2 tablespoons water 
1 teaspoon vinegar
