Leftover salad can easily become gazpacho.

Donna Sigler of Buckingham, Pennsylvania knows what to do with a lot of dressed, leftover salad that's going to turn into a soggy waste by the next morning. She throws the oiled and spiced vegetables into a blender, adds some tomato juice, and mixes the contents up. Viola! The best gazpacho you've ever tasted!
