Celebrate the special holiday fruits during Christmas by making this Gooseberry Pie Recipe.

Gooseberry Pie Recipe

Pick a little more than 1 quart quart of gooseberries. Discard any soft berries. Remove stems and tails if necessary, then wash the berries.

Combine:
3/4 cup sugar
4 1/2 tablespoons flour
1/8 teaspoon salt

1. Sprinkle over berries and stir to distribute.

2. Turn berries into an unbaked 8-inch pie crust and dot the top with 2 tablespoons butter. Roll pastry for the upper crust, and cut a design for steam vents. Brush the edge of pastry with water.

3. Lay pastry over pie. Press pastry edges together and trim. Let rest 10 minutes and flute.
