This basic fava bean salad uses ingredients typical of Middle Eastern fava dishes and is traditionally served with hard-boiled eggs and parsley.
1/2 cup dried fava beans, soaked
4 tablespoons olive or flax oil
juice of 1/2 lemon
2 garlic cloves, crushed or finely chopped
Cook beans until soft (about 90 minutes). Drain well. Dress with oil, lemon and garlic. Let cool. Serves 3 to 4.
