Slice the kernels from 6 ears of cooked, fresh corn (or use medium can of well drained whole kernel corn). Add 1/2 of a medium green pepper (chopped), 3 to 5 chopped celery stalks, 1 chopped onion, 2-1/2 tablespoons of chopped pimento, 2-1/2 tablespoons of white vinegar, 2-1/2 teaspoons of salt, 1 teaspoon of dry mustard, 1 teaspoon of pepper, and 2/3 cup of olive oil. Stir together and allow to stand for 4 to 6 hours to mellow. Then cover and store in a refrigerator. This relish keeps well for at least a month.
