Veggie Burger

Have a killer recipe for veggie burgers? We’d love to feature it on our Web site and in our upcoming Mother Earth News Real Food Cookbook. And we’ll award a recycled, reusable Mother Earth News grocery tote to the creators of our five favorite recipes! Get creative — standard hamburger-style recipes are great, but feel free to submit something totally wild, too. The only requirements are that the recipe be original and contain only vegetarian ingredients.

1 cup chickpeas ( 1 tin) 200g mushrooms 1 large onion 1 big tomato 2 cloves of garlic half a green pepper garam masala, five spice powder or spices of your choice. salt and pepper to taste half a cup fresh bread crumbs or wholewheat flour. Oil to fry Boil chickpeas and mushrooms. Put into a food processor. Add tomato, green pepper and process. Cut the onion into rings and stir fry onions, garlic and spices. Then add the chickpea and mushroom mixture to the pan and fry for a few minutes. Return the mixture into the food processor and add bread crumb or wholewheat flour and process until the mixture turns into a dough. Use your hands and shape the mixture into small burgers. Deep fry or pan fry individually. Serve in burgher buns with an onion ring, a tomato slice and sauce of your choice.

Black Bean Burgers 3 cups cooked black beans 4 large eggs 1/2 teaspoon salt 1 teaspoon ground cumin 1 red bell pepper, finely chopped 1 onion, finely chopped 1 cup breadcrumbs 1 tablespoon olive oil Puree the beans and eggs in a food processor, leaving a few chunks of whole beans. Pour into a mixing bowl and stir in the salt, cumin, bell pepper, and onion. Mix in the breadcrumbs and let sit for 10 minutes. Heat the oil in a heavy skillet over medium low. Spoon bean mixture into pan, shaping into patties. Cover, and cook for 8-10 minutes. Flip the patties and cook for 7-9 minutes more. makes about 8 patties. Very simple and yet quite tasty on a bun with all the fixin's. They also freeze well and can be reheated on a grill!

In the mid-seventies, I lived in Durham, NC. Making frequent trips to Raleigh, I often ate at Irregardless Cafe'. They had the BEST vege-burgers. I haven't had the opportunity to return since then and wonder if their burgers are the same as in 1977. I have always wanted their recipe so I could try them at home. If anyone knows what the recipe is or was, I would love to know it! They may have called them 'Bean burgers' then. Thanks!
