Milling flour hasn’t changed much in 150 years. Clean the wheat, grind it and sift it (if you want “white” flour). Some good folks here in Kansas have built a replica of an 1880s flour mill — from oak and cottonwood trees on the building site — and filled it with vintage equipment that they’ve carefully restored.
