Long cherished in the South, sorghum has recently been rediscovered by progressive chefs across the nation.

As the animal takes a step forward, the part of the pole behind him is pulled toward him and the pole in front is moved away, keeping him in perpetual motion. The gears attached to the pole turn the rollers that crush the cane.
