Red Curry Recipe With Mussels and Kimchi

Makes 4 servings

Ingredients:

1/4 cup unsalted butter
1 tablespoon peeled, finely grated fresh ginger
2 large cloves garlic, minced
2 tablespoons Thai red curry paste
1 cup any napa cabbage kimchi, coarsely chopped, plus more for garnish
2 (14-ounce) cans coconut milk
1/2 cup white wine
4 pounds mussels, rinsed and scrubbed
1/4 cup kimchi juice 
2 green onions, white and green parts, finely chopped (about 1/4 cup), for garnish
