Look around a little and you’ll find hundreds of recipes for salmon spread. Some include mayonnaise. Some use yogurt. Some call for fish that’s been, smoked, poached, or pickled. It’s such a flexible, versatile food you can use it with almost anything. Here, we’re keeping it simple. Canned salmon paired with onions, lemon juice, dillweed, and low fat ricotta cheese will yield irresistible appetizers.

7 1/2 -ounce can of salmon
1/2 cup ricotta cheese
1 tablespoon minced onion
1 tablespoon lemon juice
1/8 - 1/4 teaspoon dillweed
