Get to know Clem Stechelin of Clem’s Oregon Trail Seasonings, and Mark Joy and Alison Sheafor-Joy, home brewers. 

What are you going to speak about at the MOTHER EARTH NEWS FAIR? 

Clem StechelinI will present 2 speeches, one called Meat Cutting 101, I will use a DVD and will explain to the audience the cuts we are doing, where the bones are, and what the end result of what the product will be, steaks, roasts, hamburger, jerky. This should take a little over 45 minutes. The second speech will be Jerky and Sausage Made Easy. Again we will use a DVD and explain the processes we are using to make jerky and sausage at home. Part of the DVD explains how to make skinless sausages without a lot of equipment. We will also mix the seasoning with the sliced meat for jerky and explain how to prepare it for drying, and mix ground meat with sausage seasoning and show how to make rolls or skinless sausage.

What are you most looking forward to sharing with FAIR attendees? 

50 years of experience cutting meat and making jerky and sausage. I will enjoy answering questions.

Tell us about your background with your particular topic. 

50 years experience as a meat cutter, the last 25 years I had my own butcher shop. We also had a mobile butchering truck, where we harvested animals on the farm and brought in to be processed.

Why should fairgoers attend your presentation? 

Anyone who is processing farm animals or game animals will learn from our presentation.


What are you going to speak about at the MOTHER EARTH NEWS FAIR? 

We will describe how to brew beer in your kitchen and where to get the supplies. We'll suggest a couple of helpful books plus open your mind to the broad possibilities of adjuncts that can be put into beer.

The joyous art of home brewing.

Tell us about your background with your particular topic. 

Mark has been creating his own recipes and home brewing for over 20 years. I feel lucky to have found a partner that enjoys experimenting with homebrew as much as I. I was first introduced to home brewing by my father. Sadly I unknowingly ended his yearly brewing adventures when I was 9 or 10 (it's a long and humorous story). My brother and two cousins also dabble in home brewing. I started brewing from my own recipes about 5 years ago.

How will you get to the FAIR, and how far do you have to travel? 

We will drive our 2005 Honda Civic that gets 41 mpg. It'll take us just over 2 hours to get to the fairgrounds--unless the Seattle traffic is in a snarl.

Why should fairgoers attend your presentation? 

Do you like beer? Have you ever thought beer might be better with additions from your kitchen, such as, chocolate, anise, saffron or a special honey?

What are you most looking forward to at the FAIR? 

Being surrounded by like-minded people that are interested in healthy living, ecology, growing their own food and creating their environment using their own two hands.

What advice do you have for attendees? 

Come with an open mind and no expectations. Drink in the flavor of the event and go to as many lectures as you can squeeze in. Oh, and bring a notebook, you'll want to take notes.

If you were stranded on a deserted island and could have only one thing, what would you choose? 

Oh dear, I was asked this question in modeling school when I was 14. To the shock and dismay of the teachers I said, "Chap Stick" because back in Kansas I often had chapped lips. I remember rolling my eyes when the girl sitting next to me said, "mascara". I still use Chap Stick, but in my wizened old age I’ll choose a solar powered system that will desalinate sea water because clean drinking water is a must. Last night I asked Mark and his answer was simply “beer”.
