We rarely (never?) see rabbit in US supermarkets, although it’s available everywhere in Canada and Europe.
What you may not know is that not only is rabbit delicious, it’s really good for you. In fact, rabbit is the most nutritious and healthy meat you can eat.
Rabbit contains less cholesterol than turkey or chicken. It also has the lowest percentage of fat and the highest percentage of protein of any meat.
A frying rabbit is one to three pounds. A roaster rabbit is over three pounds.
Here's what it'll look like when you purchase it. You can cut it into six to eight pieces: two back legs, two loin pieces (cut each one in two if they're large), and two shoulder/front legs.
Best to think about this as you would a chicken carcass, I think. And maybe not tell your kids what you're eating.
