Measure 2 cups of maple syrup and 4 tablespoons of butter into a large saucepan and boil to 230 degrees Fahrenheit, or until the solution just holds together when dropped into cold (not iced) water. Remove from heat and let cool to lukewarm . . . then beat the mixture until it begins to lose its gloss. Pour the fudge into a lightly buttered 8 inch by 4 inch loaf pan immediately and cut it into squares before it has completely hardened.
