Beet Slaw Recipe
1 cup raw grated beet, unpeeled but scrubbed well
2 cups grated carrot or shredded cabbage (or one cup of each)
salt to taste
Mix the vegetable ingredients together and toss them with the salt, then serve with the dressing. As a variation, add 1/2 cup
currants and 1/2 cup chopped walnuts. Serves 6.
