The cupcake has had a renaissance. We could say it's time muffins got their due as well, except they've have never lacked for either popularity or innovation. This tropical applesauce muffins recipe is a case in point. It blends the familiar (apples) with the exotic (well, coconut and pineapple are mildly exotic) for a healthy treat that provides a known comfort while satisfying your taste for adventure.
1 cup whole wheat flour
1 cup unbleached all-purpose flour
2/3 cup sugar
1/2 tsp salt
2 tsp baking powder
2/3 cup coconut milk
1/4 cup applesauce
1/2 tsp vanilla extract
1 egg, beaten
1/2 cup chopped pineapple
1/2 cup unsweetened coconut, shredded
Preheat oven to 400 degrees. Sift together the flours, sugar, salt, and baking powder. Set aside.
Whisk together the coconut milk, applesauce, vanilla, and egg. Stir in the dry ingredients, then fold in the coconut and pineapple. Divide the batter among 12 greased muffin cups. Bake for 20 minutes, or until a toothpick comes out clean. Allow the muffins to cool for 5 minutes before removing to a cooling rack. Makes 12 muffins.
