What Homegrown Veggies Did You Serve for Thanksgiving?

Sliced carrotsThe spiced carrots I made for Thanksgiving yesterday were a big hit. I harvested the carrots a few weeks ago from our office garden, and cooked them with fresh garlic, chili powder, cumin, salt and lemon zest. What a fun treat to get to grow something, then serve it to others during a beautiful, festive meal.

Sometime when you take a break from snacking on turkey sandwiches and leftover mashed potatoes (yummm), we’d love to hear about the homegrown veggies you served for Thanksgiving. What garden favorites always grace your holiday table? Did you try any new varieties of greens, potatoes, sweet potatoes, carrots, apples, or other fruit or veggie that you and your guests really loved?

The last of my end of harvest/2nd season tomatoes finally ripened, with a few exceptions. Made my first salsa, since I know it's probably the only way the family will eat it.

I made a Caribbean pumpkin pie (using coconut milk) with my garden sugar pie pumpkin, served some of my spicy dilly beans, and made a green tomato mince meat pie with the filling I canned back in the fall.

This was our first garden in our new area (moved from Colorado to Vermont) and we were pretty successful, all things considered. We served Deviled eggs as an appetizer from our chickens, Butternut Squash soup made with our own Butternut and Gilfeather Turnips. Pumpkin pie from our pie pumpkins, and one of our guests brought his carrots over the day before so we added glazed carrots. Apple pie from our apple trees and next year we hope to be feasting on our own turkey and possibly using some of that Floriani Red Flint corn for stuffing...I guess we'll just have to wait and see.

I roasted a chicken (turkey too expensive) with yellow, red, and blue potatoes, red beet, sweet potato all of which I grew, home canned corn and carrots which I got from a friend at our farmer's market. Plus, zuchinni/cranberry bread and kale from my yard. Very colorful, very delicious.

I made pumpkin pies from my sugar pumpkins and sweet potato casserole. I was worried that I would not have a good sweet potato crop this year because of higher-than-normal temperatures and a long drought. These babies loved it! One of my sweet potatoes weighed 3 lbs. I made curried pumpkin soup with my onions, garlic and left-over pumpkin puree.

We had buttercup squash, green and yellow wax beans, and pickled beets, and bread and butter pickles, all from our vegetable garden.

I served eggs from my chickens. I also roasted parnips and beets from the garden. The candied sweet potatos were from my garden too. I just wish the garden would have been more productive. I guess I'll just have to keep composting!

This Thanksgiving I made roasted brussell sprouts from my garden with fresh garlic and rosemary from my herb garden. We had winter squash soup, a pumpkin casserole and a salad with swiss chard cut and tossed in.

All of the herbs that went into our feast came from my herb garden: sage, marjoram, thyme, tarragon, rosemary. I made an herb/shallot butter, with sage and shallots from my garden. Before dinner, I served Dulce de Membrillo, made from my own quinces, with Manchego cheese, and also chips and salsa made from my bumper crop of tomatillos, together with chiles, Zebra tomatoes, Egyptian walking onions, and parsley, all from my garden. For dessert we had a locally made gelato topped with slow roasted quinces. The entire feast was locally gathered - if not from my garden, from my farmer friends. (No cranberries this year - they don't do well in New Mexico.)

I served cauliflower casserole,cooked kale with ham hocks and sweet potato casserole. It was very good.

Served Corn and Green Beans. The Corn tasted like fresh Corn on the Cobb.

I went to a friend's house and brought a rutabaga/apple casserole (my rutabagas) and roasted parsnips in horseradish/herb butter(my parsnips, my horseradish, thyme and lavender). Also, I brought a few bottles of home-made wine -- the best was made from black currants from my garden. Another batch was pumpkin wine from Rouge vif d'estampe pumpkins that took over my garden last year.
