After my great-grandparents slaughtered a pig, my grandmother would make homemade sausage. Then she proceeded to make it into patties. Then she fried the sausage patties and put them into a ceramic crock. Then she poured the rendered fat into the crock as well. This process was repeated until all the patties were cooked. The top was covered with the remaining grease and then the crock was placed in the cool cellar. Then when she needed some patties, she would go to the cellar and bring up the amount she needed and slowly heat them. The excess fat was used for the eggs.
