Finding chicken eggs is easy all year (though you’ll be impressed with spring and summer offerings of free-range hens). But some finicky fowl only lay their eggs in spring. Now’s the time to hit your farmers market or specialty grocery if you want to try duck, goose, pheasant, quail or turkey eggs.
Duck, goose and pheasant eggs are favorites for their bold, rich taste and great texture, while quail eggs are more delicately flavored. Turkey eggs are a lot like chicken eggs — but hey, they’re worth trying at least once!
