An infusion is made by pouring boiling water over the herbs and allowing it to steep, off heat, for 20 minutes or so.

A decoction is made by adding herbs to boiling water and allowing the water to boil for 20 minutes or so.

A suggestion: come to the Librum, http://www.librum.us, and in the links section you will find a link to the Encyclopedia of Herbs.  Or, direct linked, http://www.allnatural.net/pages/index.shtml.

Then, while at the Librum, grab the demo copy of The Book of Herb Cookery, 1941.  It is limited, sixty days, but will be a good 'teeth cutter'.

Then, research the market.  Herbs are big business.  The biggest one here right now is Stevia.

I'm going to be planting an herb garden this spring for the first time.  I've been reading about teas and how to prepare them, but am having a bit of confusion over terminology.

What is the difference between an infusion and a decoction?  From what I've read, one seems to be the standard preparation: put tea lives in hot water and let them steep.  The other appears to be boil the leaves and drink the result.  Am I correct?
