There are companies that make stainless steel tubes for the woodstove that will then transfer it to a tank water heater. http://www.hilkoil.com/product.htm 

Its just an easier DYI with limited materials.

The least expensive Hilkoil costs $168.

Why not just drill two opposed holes through the stove and pass a stainless steel pipe throught the holes.

If you want more heat just add more pipes.

I have attached two pictures of manifolds that could be made to neatly join the ends of multiple pipes. One is machined from a solid block and the other is a weldment made from square tubing and machined inserts.

I have noticed many different suggested variations for adapting woodstoves to heat water for space heating.
Has anyone considered using a system similar to a maple syrup evaporator but replacing the open pan with a closed tank ?
Maple syrup evaporators are designed specifically to boil large amounts of water and have been in development for many, many years so the technology should be well established.
It is essentially the same as cutting a hole in the top of a stove and setting a tank on top except that the top of the stove is extended to allow for a longer tank with a much larger bottom surface area exposed to the fire.
Maple syrup pans also tend to have a ridged or channeled bottom to give it a larger surface area exposed to the flame.

I have attached a small .jpg to illustrate the idea.

You may want to consider purchasing a multi-fuel stove already designed to be a boiler. Take a look at the link below.
