Preserving freshly chopped garlic Options

I find that peeled garlic does not last well, it dried out too quickly.  How much are you using that you want to pre-peel it?

You could freeze it.  You can also pickle it, or dry it if your doing large batches.. I puree a bunch when it's in season, then freeze it in ice cube trays for when i need it through out the winter. (Once it's frozen you can take it out and put in bags)

Why use just a clove or two at a time?   I usually peel and mince a bulb's worth of cloves for each time I use it. It is so healthful and good for you! Have you tried roasting whole bulbs? Sprinkle them with olive oil after cutting the top part of the bulb off (exposing the cut tops of each clove).  Then bake or roast until soft.  Squeeze the soft cooked garlic out to spread onto toast or crackers or meats. Mmm..good!

Garlic will dry out quickly once it is peeled.  Best to peel it as you use it.

My friend likes to peel his cloves and put them whole into olive oil in a jar. They keep for months that way, especially if refrigerated. The oil gets garlic flavored, and can be used in recipes along with the garlic.

What are the best couple ways to do it? Rather than chop a clove at a time, I was thinking it'd be nice to be able to do a whole bulb or two at once and save the unused part for later. Not sure of how to go about doing that, though? Can I just stick the left overs in a plastic bag and place it in the fridge, or...???
