Hey Cmate I haven't done bananas in sometime. I believe its your length of time. For the ones in the trail mix they're coated and I forget what you do to keep them so nice.

They will turn a bit dark especially near the centre. Since I'm into the raw food diet I do a lot of my food in the dehydrator. Its all timing. I like to do my own potato chips and If I leave it for more then 6 hours they turn darker and real hard.

So next time just try drying for about three hours take a few out wait twenty minutes for them to cool and firm up and see if that works.

For example I make crepes out of bananas. for those I puree the banana then pour it out on to the dehydrator tray and dehydrate it for 10 hours. After that I get a real nice leathery sheet just like a fruit roll up.

For the filling its a couple of different nuts made into a paste that is then spread on to the banana leather then rolled up and cut into pieces. Then I puree a bunch of strawberries or blue berries  in my food processor then pour the liquid over the crepes and they soften right up as if made from the traditional recipe.

Try tossing with lemon juice like you would for apples or artichokes

I tried to dehydrate Banana Slices & they all turned black from the air, how do you make them to look like what you get in Trail Mix? Nice & yellow? :^
