Workshop Description 

Explore the health benefits of raw milk, the benefits to family farms, and the importance of sanitation and safety. Find out how raw goat or cow's milk is packed full of bio-available minerals and vitamins, as well as immune-strengthening beneficial bacteria. Consumers will learn what to expect when seeking a healthy, safe source of raw milk, and producers will learn how they can maintain our right to produce raw milk. 

Speaker Bio 

Charlotte Smith is the owner of Champoeg Creamery, a micro-dairy consisting of two Jersey cows. She is also a home cheesemaker, a certified nutritionist and raw milk educator. Smith’s passion has grown to include doing what it takes to ensure a safe supply of raw milk for Oregonians. In the spring of 2012, she founded the Oregon Raw Milk Producers Association, a nonprofit organization committed to the education and mentoring of raw milk producers in the state, because there are currently no other resources. In September 2012, Champoeg Creamery was chosen to be the first dairy listed by the Raw Milk Institute, an organization that has developed common standards nationally for safe raw milk production. This listing showcases the excellent standards the dairy must achieve and maintain at all times for raw milk to be safe and healthy.
