This workshop will introduce you to the basics of lacto-fermentation and the health benefits of adding fermented foods to your diet. The workshop will provide easy to follow instruction on how to ferment vegetables at home and will include a demonstration of how to make American-style kimchi.
Michael Schwartz is the owner of BAO Food and Drink and the Organic Food Incubator (OFI) in Queens, N.Y. Through OFI, he offers consulting on a variety of food subjects including nutrition, food manufacturing and product and recipe development. He has been on the faculty of the Institute for Culinary Education in New York City since 2000.
