This workshop will begin with the basics: how tea is made, major differences between tea-producing countries, and the six varieties of tea (white, yellow, green, oolong, black and pu-erh). We'll consider how to make the perfect cup of tea, the many ways to serve tea (such as Chinese gaiwan, gong fu style, Moroccan green tea with fresh mint, matcha, English style), some health benefits, and cooking with tea. At this presentation, we plan to include a small demonstration and tasting group, as well as time for questions.
Paula Winchester founded Herb Gathering Inc in 1979, one of few fresh herb growers and wholesalers in the United States. Now, she sells to more than 40 grocery stores in the Greater Kansas City area every week of the year. Her passion for plants has taken her into the tea fields of Japan, China, Taiwan and soon India to study tea. Her online business Twelve Winds Tea Company specializes in Chinese teas. She spent a decade taking professional tea courses from the Specialty Tea Institute in New York City. Winchester is a practicing Chanoyu tea student under tea master Dale Slusser in Lawrence, Kan.
