Taking advantage of the nutrients in freshly-ground grain shouldn’t mean having to eat heavy, dense or crumbly bread. Learn a few simple steps to making home-ground wheat into light, springy loaves with a tender crumb and resilient slice, perfect for sandwiches or toast.

Speaker Bio

Shawn and Beth Dougherty are artisan farmers with more than 20 years of experience in chemical-free gardening and animal husbandry. They run a diversified operation in eastern Ohio that includes intensively grazed dairy and beef animals, garden-fed pigs, pastured meat and laying chickens and year-round gardening. They harvest organic hay, butcher their own animals, and operate a home creamery. They raise most of what they eat and most of what their animals eat, their ongoing project being to rediscover the methods whereby families and individuals can provide their own food from a small acreage with a minimum of purchased feeds and inputs.
