Living Well With Celiac Disease: Wendy Gregory Kaho on Going Gluten Free

Place of Residence: The Hocking Hills region of southeastern Ohio

Background: After 10 years and as many misdiagnoses as they saw doctors, Wendy and her two children were diagnosed with celiac disease.  The gluten in their daily diet was the cause of allergies to almost everything and symptoms of chronic fatigue, ulcerative colitis, rheumatoid arthritis and a variety of other ailments.  Wendy's blog, Celiacs in the House, chronicles the advances in public awareness of this hidden disease and shares the challenges and joys of creating appetizing gluten-free foods for her family.

Personal History:  A history major at The Ohio State University, Wendy focused on the history of women, with emphasis on domestic life and medicine.  Through OSU's Creative Activities Program, she developed and presented workshops for adults and for children combining history, food and crafts in museum settings throughout central Ohio. She also featured art themes in her popular cooking classes at Circle in the School in Nelsonville, Ohio.  While home schooling her children, Wendy was a Master Gardener, Girl Scout and 4-H leader and her love of food, cooking, gardening and creativity with kids were prevalent.  Wendy, her husband, and two college-bound kids share the family's 11 acres with two horses, two dogs, and a garden that gets bigger every year.  

Current Projects:  Wendy is currently learning about small grain growing and plans to experiment with millet, buckwheat and/or amaranth -- all gluten free.  She also is working to educate area farmers and vendors about the lucrative marketability of gluten-free grains and products, as well as the perils of cross contamination for the growing population of celiac-affected consumers.
