1 cup whole wheat flour
1 cup unbleached all-purpose flour
2/3 cup sugar
1/2 tsp salt
2 tsp baking powder
2/3 cup coconut milk
1/4 cup applesauce
1/2 tsp vanilla extract
1 egg, beaten
1/2 cup pineapple, chopped
1/2 cup unsweetened coconut, shredded
Instructions:
Preheat oven to 400 degrees. Sift together the flours, sugar, salt and baking powder. Set aside.
Whisk together the coconut milk, applesauce, vanilla and egg. Stir in the dry ingredients, then fold in the coconut and pineapple. Divide the batter among 12 greased muffin cups. Bake for 20 minutes, or until a toothpick comes out clean. Allow the muffins to cool for 5 minutes before removing to a cooling rack. Makes 12 muffins.
