When you are canning in a water-bath canning operation, wrap the large container with some fiberglass insulation - the pink batt type. This will keep the water hotter longer and help to keep the room a lot cooler. The insulation needs to be kept away from the heat source to prevent catching on fire, but this system works for me. I use a section of wire to hold the insulation in place.
